Paul Petersen, Chef (For Ages 21 & Up) DEMONSTRATION. Enjoy Chef Paul’s delightful renditions of these Texas favorites, using Hatch chiles as inspiration! Each course will be paired with a specially-selected wine. Menu includes: Heirloom Tomato & Avocado Salad with Shaved Red Onion, Texas Goat Cheese & Roasted Hatch Chile Vinaigrette, paired with Demi Sec Sparkling Wine; Hatch Crab Relleno Stuffed with Crab, Smoked Gouda & Toasted Pecans, topped by Sun-dried Tomato, Cilantro Pesto & Cotija Cheese with Texas Beer; Chili-rubbed Buffalo Rib-eye with Spiced Cheesy Refried Black Beans & Fresh Corn, Hatch Chile Pico de Gallo with Pinot Noir; and Chocolate Hatch Chile Bread, served Warm with a Chipotle Caramel Sauce & Spiked Chocolate Drizzle with Dessert Red Wine. $70 CLASS TIME: 11 AM – 1:30 PM PLEASE NOTE: No outside alcohol allowed in the classroom. Wine pairing classes includes 4 to 5 two-ounce pours of wines specifically selected for the dishes being served.
